Cathedral City Mature Pasta Bake
Serves 4
300g quick cook penne
1 onion, halved
1 tablespoon of olive oil
125g grated xxxxxxx
400g tinned, chopped tomatoes
Salt and pepper

Preheat the oven to 200°C. Cook the penne in boiling water with tablespoon of olive oil, until al dente (still slightly firm). In the meantime warm through tinned tomatoes and halved onion in a pan, seasoned with salt and pepper. Transfer pasta and tomatoes to ovenproof dish (discard the onion). Stir through 100g of grated Cathedral City and sprinkle remaining 25g over the top. Bake in the oven for 10-15 minutes until the top is golden and bubbling.
