Marmalade bread and butter pudding

4tbsp sultanas
1tbsp orange juice
?tsp ground cinnamon
?tsp ground nutmeg
250g (9oz) lightly-stale bread, crusts removed
4tbsp marmalade
225ml (8fl oz) semi-skimmed milk
140ml (4?fl oz) double cream
2 eggs
25g (1oz) golden caster sugar
1. Preheat the oven to 170°C/325°F/Gas 3. Butter a large oven-proof dish. Soak the sultanas in the orange juice for 1 hour.
2. Mix together the butter, cinnamon and nutmeg. Lightly butter the bread, using the mixture. Cut each slice into triangles.
3. Layer half the bread, butter side up, on the bottom of the dish and spoon over the marmalade and half the drained sultanas. Top with the remaining bread, buttered side up. Sprinkle with the remaining sultanas.
4. In a jug, beat together the milk, cream, eggs and sugar. Pour the mixture over the bread. Put the dish in a roasting tin and pour hot water around it to a depth of 2.5cm (1in).
5. Bake for 35 mins until the pudding is brown.
