Macaroni bake

200g (7oz) macaroni
100g (3½oz) broccoli florets
65ml (2¼fl oz) olive oil
1 onion, peeled and chopped
50g (1¾oz) plain flour
500ml (18fl oz) Organic or Calcium Rice Dream
2tbsp sun-dried tomato paste
1tsp mustard powder
Juice of a lemon
10g (¼oz) fresh basil, torn
100g (3½oz) sweetcorn kernels
50g (1¾oz) bread, torn into small chunks
Salt and pepper
12 cherry tomatoes, halved
1.Preheat the oven to 200°C/400°F/Gas 6. Meanwhile, cook the macaroni according to packet instructions. Add the broccoli for the last 3-4 mins of cooking time.
2. Place half the oil in a large pan, and fry the onion for 5 mins. Add the flour and mix to a paste. Heat gently for a couple of mins.
3. Add a quarter of the Rice Dream, whisking out any lumps, then gradually add the rest, whisking constantly. Bring to the boil and simmer for 5 mins.
4. Stir the tomato paste, mustard powder, lemon juice, basil and sweetcorn together with the macaroni and broccoli. Season and pour into an ovenproof dish.
5. Coat the bread with the remaining olive oil, scatter over the macaroni along with the tomatoes, then bake for 40 mins.
