Sausages, chips and onion gravy

Take the ingredients that you already have...
450g (1lb) potatoes, peeled and cut into chunky chips
1-2tbsp vegetable oil
2 sprigs fresh thyme
Salt and pepper
6-8 pork chipolatas
1tbsp vegetable oil
1 onion, finely-sliced
½tsp wholegrain mustard
150ml (¼pt) pork stock
1tsp gravy granules

1. Preheat the oven to 200°C/400°F/Gas 6.
2. Cook potatoes in boiling water for 5-8 mins. Drain, toss with 1-2tbsp of oil and the thyme. Season well.
3. Roast the potatoes in the oven for 15-20 mins, or until lightly browned.
4. Meanwhile, cook the sausages in the oven for 20 mins, or until cooked through, turning regularly.
5. Heat 1tbsp of oil in a saucepan. Add the onion, and cook until soft. Stir in the mustard, and then pour in the stock.
6. Bring to the boil. Add the gravy granules. Simmer for 10 mins, or until the liquid's reduced by half.
7. Serve the sausages and chips drizzled in gravy.
