Sausage casserole

1tbsp olive oil
1 red onion, finely-chopped
3-4 leftover sausages, already cooked
Sweet potato, swede and carrots, peeled and diced
200ml (7fl oz) chicken stock
and just add?
400g (14oz) tin of tomatoes
Salt and pepper

1. Heat the olive oil in a pan, and fry the onion until soft. Add the tin of tomatoes. Season.
2. Place your leftover sausages and vegetables in a casserole dish, add the tomatoes and onion, pour in half the stock, and stir.
3. Preheat the oven at 200°C/400°F/Gas 6. Cook for 30 mins, or until thoroughly heated through. Check after 20 mins, stir, and add more stock if needed. Serve with rice or crusty bread.
