Individual spam quiches

Take the ingredients that you already have...
Butter, for greasing
4 sheets filo pastry
1 beaten egg, for brushing
1 tbsp olive oil
1 medium onion, diced
4 small white button mushrooms, finely-chopped
200g (7oz) Spam Chopped Pork and Ham, cut into 1cm (½in) cubes
150g (5½oz) light cream cheese
2 beaten eggs
1 tbsp chopped parsley
1 tbsp chopped chives
1. Preheat oven to 200°C/ 400°F/Gas 6. Grease 4 ramekin dishes with butter.
2. Place 1 filo sheet on a lightly-floured board. Cut into 4 squares, brush with egg. Layer on top of each other to form 16-point star.
3. Press into a ramekin dish, cut off excess pastry. Repeat with remaining sheets.
4. Heat oil in a frying pan. Add onions and mushrooms, fry for 2 mins. Add the Spam. Cook for 2 mins.
5. In a mixing bowl, beat together the cream cheese and 2 eggs. Add the parsley and chives. Stir in onions, mushrooms and Spam.
6. Pour into the pastry cases. Bake for 12-14 mins.
7. Serve with salad.
