Irish beef goulash

Cooking time: 35 mins
Cals per serving: 428 1tbsp olive oil
1 medium onion, peeled
and sliced
1 red pepper, deseeded
and sliced
1 green pepper, deseeded and sliced
600ml (20fl oz) beef stock
4tbsp tomato puree
3tbsp paprika
Salt and pepper
500g (1lb 2oz) roast beef
cut into cubes
Small bunch of flat leaf parsley, chopped
100ml (3?fl oz) sour cream

1. In a saucepan, heat up the olive oil and fry the onions and peppers until lightly-coloured.
2. Stir in the beef stock, tomato puree and paprika. Season and bring to the boil. Cook for about 20 mins, then add the beef and cook gently for another 10 mins.
3. Garnish with chopped parsley and sour cream, if liked. Serve with lightly- buttered pasta, noodles
or rice.
