Irish beef goulash with potato and carrot topping

Leftover Irish beef goulash
Butter
Salt and pepper
and just add?
1-2 large carrots
2-3 large potatoes
1. Peel and chop the carrots and potatoes, cook in a pan of boiling water for 15-20 mins, or until soft. Drain.
2. Heat your leftover goulash, and place in an oven-proof dish, add half the carrots and stir.
3. Mash the rest of the carrots and potatoes with a knob of butter, season, and place on top of the
hot goulash.
4. Grill for 3-4 mins or until the mash is golden and crispy. Serve.
